Ingredients:

800g large raw prawns

5 garlic cloves

1 small red chilli

¼ cup coriander leaves

2 tablespoon lemon juice

1 tablespoon brown sugar

Salt and ground pepper to taste

100g unsalted butter, melted

Directions:

    To make the covering sauce, with food processor mix garlic, coriander, red chilli, brown sugar, a pinch of salt, lemon juice and the melted butter to combine. Set aside.

    Season prawns well with Salt, pepper. Preheat a char-grill pan or barbeque over high heat. Cook the prawns for 2–3 minutes each side or until cooked through, meanwhile gently brush with the covering sauce .

    Serve the grilled prawns with remaining covering sauce and lime wedges.
